THE RECIPE
With maple syrup, honey, cinnamon and pecans, these muffins really
are a sweet surprise. And made using our 0% Fat Natural Yogurt,
there’s no need to feel guilty about enjoying one or two either…
- 150g plain white flour
- 150g wholemeal flour
- 3 tsp baking powder
- 1 tsp bicarbonate of soda
- 1 tsp ground cinnamon
- 50g soft brown sugar
- 30g chopped pecan nuts
- 1 sweet eating apple, peeled and chopped (e.g. Golden Delicious)
- 2 eggs, beaten
- 1 tbsp maple syrup
- 100g Yeo Valley Unsalted Butter, melted
- Pinch of salt
- 1 tbsp honey
- 1 tsp vanilla extract
- 200g Yeo Valley 0% Fat Natural Yogurt or
0% Fat Vanilla Yogurt
FOR THE NUT TOPPING
- 60g (2oz) pecans, chopped
- 1 tsp ground cinnamon
- 2 tbsp maple syrup
METHOD
- Preheat the oven to 180°C/gas mark 4. Sieve the dry ingredients into a bowl and add the diced apple.
- Beat together the eggs, maple syrup, melted butter,honey and yogurt. Pour this liquid into the dry ingredients and mix until moist but still lumpy.
- Spoon the batter into muffin tins.
- Mix together the topping ingredients until combined, then sprinkle over the top of the muffins.
- Bake in the oven for 20-25 mins until firm, risen and golden.
- Leave to cool in the tins for 5 mins, then turn out to cool completely on a cooling rack.
