White Chocolate Cheescake

Pudding today, very easy but if you like white chocolate - gorgeous.  I topped mine with grapes but you can use any fruit or just more chocolate.

Ingredients

75g butter
10 crushed digestive biscuits
300g white chocolate
500g mascarpone
150 ml double cream

Butter suitable tin, I use a spring form tin.
Melt butter and add biscuits, mix well and line the base of the tin
Melt chocolate and half mascarpone over pan of simmering water.
Cool a little then add rest of mascarpone and then the cream.
Smooth into tin and put in the fridge to cool and set.
Top with whatever fruit etc  you like.
