CREAMY COCONUT LIQUEUR #SUNDAYSUPPER

Serves: 1 lt. - 4 cups
INGREDIENTS
  • 400 ml – 1⅔ cups coconut milk
  • 250 ml – 1 cup heavy cream
  • 250 ml – 1 cup milk
  • 100 gms – ½ cup sugar
  • 100 ml – 3 oz. alcohol 95% or 151 proof grain alcohol (or 125 ml – 4 oz. Vodka)
  • 5 tbsp desiccated coconut
  • 2 tsp coconut essence
INSTRUCTIONS
  1. Put the coconut milk, cream, desiccated coconut, sugar and milk in a saucepan and heat on the fire until the sugar has melted.
  2. Let the mixture cool down and then chill very well in the fridge.
  3. Add the alcohol and coconut essence and mix well.
  4. Filter it through a sieve and bottle it.
  5. Keep it in the fridge for a couple of days and shake well before serving.
NOTES
This liqueur should keep in the fridge for a couple of months, though mine never lasts that long.
