Grilled Peaches with Feta and Honey Recipe

Ingredients
( Serves 4 )
4 whole yellow peaches (almost ripe, but still firm - seeds removed, cut in half)
1 tablespoon canola oil
1/4 cup feta cheese (crumbled)
1 tablespoon fresh basil (finely chopped)
1/4 cup pecans, walnuts, or almonds (chopped)
2 tablespoon honey
1/4 teaspoon cracked black pepper
Directions
  1. Preheat grill to medium-high (about 375°F to 425°F).
  2. Brush peach halves with canola oil. This will prevent them from sticking to the grill.
  3. Lay peaches (flesh-side down) on grill and allow to cook for 3-5 minutes (with grill lid closed), or until some nice grill marks show up. Flip peaches over and allow to cook for another 2-4 minutes, or until tender all the way through.
  4. Remove peaches from grill and arrange them on small plates (2 peach halves per plate).
  5. Stuff the center of each peach half with 1/2 tablespoon of feta. Sprinkle basil and nuts evenly over each plate of peaches.
  6. Drizzle 1/2 tbsp of honey over each plate of peaches. Sprinkle with black pepper.
  7. Serve immediately.
