Roasted red pepper soup

 

Two bowls of red pepper & tomato soup with ricotta in two bowls



For a quick lunch this is really quick and easy.

Ingredients

1 onion
2 carrots
1 tsp garlic puree
2 Tblsp Tomato puree
Basil leaves to taste
Jar of roasted red peppers1/2 to 1 tsp of sugar
Stock to cover ( you may need more when liquidized )
Splash of cream


Method

Cook onion in oil with carrots (chopped ) until soft.  
Add garlic and good for a minute
Add rest of ingredients apart from cream but keep a few basil leaves for decoration
Simmer until soft for around 20 minutes.
When cooler liquidise and add cream to taste
Sprinkle with basil leaves to serve
