Halloumi winter salad

 



Halloumi with Lemony Lentils, Chickpeas and Beets 🍋🧀

Ingredients:
200g halloumi, sliced
250g cooked lentils
200g cooked chickpeas
2 medium beets, cooked and diced
2 tbsp olive oil
2 garlic cloves, minced
Juice of 1 lemon
1 tsp cumin
Salt & black pepper, to taste
Fresh parsley, chopped

Instructions:
Fry halloumi in olive oil until golden, set aside.
Sauté garlic with lentils and chickpeas, then add beets.
Stir in lemon juice, cumin, salt, and pepper.
Serve warm, topped with crispy halloumi and parsley.
