Sausages with Carrot and Sweet Potato Mash with Balsamic Onions.



Mash

Ingredients

  • 500g carrots, chopped
  • 500g sweet potatoes, chopped
  • 3 garlic cloves, bashed
  • 1 tsp cumin seeds, toasted
  • 25g butter

Method

  1. Put the carrots, sweet potatoes and garlic in a large pan of salted water, bring to the boil, then cook for 12 mins. Add cumin seeds, butter and seasoning, roughly mash, then serve immediately.



Onions

  • Ingredients
  • 150ml olive oil
  • 450g red onions, peeled, sliced
  • 2 tbs brown sugar
  • 20ml (1 tbs) balsamic vinegar
