Tomato Soup with coconut

 

This original and creamy tomato soup will be perfect for a light but tasty starter!
It puts tomatoes in the spotlight by combining them with our creamy AYAM™ coconut milk! 🍅🥥



INGREDIENTS
1 kg of tomatoes
200ml AYAM™ coconut milk
2 sprigs of lemongrass
1tbsp fresh ginger root, finely chopped
1 onion, finely chopped
4 tbsp. olive oil
1 tsp. sugar
Chilli powder
Salt and pepper
400ml water
Dry tomatoes


METHOD
1. In a saucepan, plunge tomatoes into boiling water for 30 seconds and then put them under cold water. Peel and de-seed them and cut the flesh into pieces.
2. Heat 3 tablespoons of oil in a casserole and sauté the onion, ginger and lemongrass for 5 minutes. Add the tomatoes and sugar and cook for another 3 minutes. Add salt and pepper.
3. Pour the coconut milk and add 400ml of water. Bring to the boil and simmer for 20 minutes.
4. Blend the velouté then add chilli powder then place in the fridge for at least 1 h.
5. when serving add dry tomatoes on the top
