Ingredients
- 1 leek, finely sliced
- 1 garlic clove, crushed
- butter, for sweating
- 140g/5oz cheddar cheese, grated
- 140g/5oz fresh white breadcrumbs
- 2 tbsp finely chopped parsley
- ½ tsp English mustard powder
- 1 egg, beaten
- oil, for frying
- salt and freshly ground black pepper
Preparation method

Sweat the leeks in the butter until soft. Add the garlic and cook for another 5 minutes

Mix all the ingredients together in a bowl. Check for seasoning.

Shape into balls, cover with cling film and chill for 30 minutes.

Preheat the oil in a frying pan and cook the balls until browned and serve with a green salad
