This homemade and super easy lemon curd that will have you making everything lemon in no time!

Ingredients
1 tbsp lemon zest
3/4 cup fresh lemon juice
1 cup sugar
1 tsp salt
3 eggs
4 egg yolks
4 tbsp butter, chopped into cubes

Instructions
In a small saucepan whisk together lemon zest, lemon juice, sugar & salt
Heat over medium heat until sugar and salt are dissolved, stirring often
In a small bowl whisk together eggs and egg yolks until well combined
When sugar is dissolved pour 1/4 of the liquid into the eggs, whisking constantly, to temper the eggs (you whisk constantly to keep from cooking the eggs from the hot liquid)
Pour an additional 1/4 of the liquid into the eggs and whisk once again, until well combined
Pour egg mixture into saucepan and heat over medium heat, whisking constantly, until mixture thickens (4-5 minutes)
Strain lemon curd through a fine mesh strainer into a medium bowl to strain out any cooked eggs (don't worry its ok) and some of the zest
Stir in butter until melted
Store in air tight container until ready to use (I preferred my curd chilled as it will thicken up even more)
Serve on anything and everything... ENJOY!!
