Ingredients
- 250g butter, softened
- 250g caster sugar
- 4 eggs
- 1 tbs orange zest
- 250g self-raising flour
- 100ml orange juice
Icing
- 250g icing sugar
- 50ml orange juice
- Grated orange zest
Method
- 1Preheat oven to 170C. Grease a 20cm round cake pan. Line base and sides with baking paper.
- 2Using an electric mixer, beat the butter and sugar together for about 8-10 minutes or until pale and thick. Add eggs, one at a time, beating well after each addition. Add flour and orange zest, beating on low speed to combine. Gradually add juice, beating until combined.
- 3Pour mixture into prepared pan. Bake for 45 minutes or until a skewer inserted into the centre of cake comes out clean. Stand in pan for 5 minutes before turning onto a wire rack to cool completely.
- 4Make icing. Sift icing sugar into a bowl. Gradually stir in enough orange juice to form a thick, spreadable paste. Spread icing over top of cake, allowing it to drip down the sides. Set aside for at least 1 hour or until set after sprinkling with orange zest.
