This Marinated Feta is an easy appetizer made with creamy feta, garlic, lemon zest, fresh herbs, Castelvetrano olives, red pepper flakes, and olive oil. It’s salty, herby, savory, and perfect for entertaining, charcuterie boards, crostini, or tossing into pasta. π€€
π Ingredients • 16 oz block feta cheese, drained and cubed • 1 tbsp dried oregano • 4 cloves garlic, finely chopped • 1 lemon, zested • 1/4 cup fresh basil leaves, julienned • 1/4 cup chopped fresh parsley • 1/2 cup Castelvetrano olives, torn • 1 tbsp chopped fresh rosemary • Red pepper flakes, to taste • 2 cups olive oil, enough to cover • Crostini or sliced bread, for serving
π©π³ Directions
1. Add the cubed feta, oregano, garlic, lemon zest, olives, basil, parsley, rosemary, and red pepper flakes to a large jar.
2. Pour in enough olive oil to completely cover the feta.
3. Cover the jar tightly with a lid.
4. Shake until everything is well combined.
5. Refrigerate for at least 30 minutes, or up to 1 week.
6. Serve with crostini or sliced bread, or toss into cooked and cooled pasta.
π‘ Pro Tip: Let the feta marinate for a few hours before serving so the garlic, herbs, lemon, olives, and olive oil have time to build deeper flavor.
