Cocolate!
I know we've all had perhaps our fill of chocolate over Christmas BUT, this is one of my favourite recipes for just that little richness after a meal. Compliments to Jamie Oliver for this one.
Recipe for Chocolate pots:
Ingredients
1/2 pint single cream
200g best quality of cooking chocolate (minimum of 70% cocoa solids)
2 large egg yolks
3 tbsp / 50 mls brandy or any other such alcohol
20 gms butter
Method
Heat cream but do not allow it to boil, snap in your chocolate to the cream and melt, stirring all the time to combine the two ingredients to a smooth consistency.
Add egg yolks and brandy and beat lightly to combine with chocolate mixture.
Allow the mixture to cool and stir in the butter until it completely melted.
This mixture will make enough to fill about 8-10 vodka shot glasses or 4 ramikin or 8 esspresso cups easily.
