Peanut Butter Chocolate Chip Cookies
Hard to resist eating just one of these JUMBO cookies

Ingredients
  1. ½ cup butter at room temperature
  2. ½ cup brown sugar
  3. ¼ cup granulated sugar
  4. 1/3 cup creamy peanut butter
  5. 1 egg at room temperature
  6. 1 teaspoon vanilla
  7. 1¼ cup flour
  8. 1 teaspoon cornstarch
  9. ½ teaspoon baking soda
  10. ¼ teaspoon salt
  11. 1 package of peanut butter and chocolate chips
  12. (or 1 cup peanut butter chips and 1 cup chocolate chips)
  13. Extra chocolate chips to press on top if desired.
Instructions
  1. Preheat oven to 350 degrees
  2. In a large bowl, with a stand mixer or hand held mixer, beat the butter, sugars, and peanut butter until mixture is smooth and creamy.
  3. Beat in the egg and vanilla.
  4. In a separate bowl, combine the flour, baking soda, salt and cornstarch.
  5. Slowly mix the dry ingredients into the wet ingredients until completely combined.
  6. Add in the peanut butter and chocolate chips until just mixed in.
  7. Using a large cookie scooper, (1/4 cup size) scoop and drop onto ungreased cookie sheet.
  8. Press additional chocolate chips onto the top of cookie dough if desired.
  9. Bake at 350 degrees for 12-15 minutes, until slightly browned edges.
  10. Cool on cookie sheet for 5 minutes before placing on wire rack to cool completely.
