Unbelievably easy to make… These rich, chocolaty, peanut buttery cookies are more like peanut butter shortbread. The best peanut butter cookies don’t call for flour. I am so happy I made this discovery. Only four ingredients! Need I say more?
2 cups organic, creamy peanut butter
2 large eggs
2 cups sugar
1 and 1/4 cup semi sweet chocolate chips
In a large mixing bowl, combine all ingredients until thoroughly incorporated. Form into golf ball size balls. Place on ungreased cookie sheets and flatten with a fork using the traditional criss cross pattern. Bake at 350, one batch at a time, for about 12 minutes. Remove from oven and allow to cool a bit before transferring to cooling racks. The cookies will seem a little soft right out of the oven, but will firm up as they cool. Fantastic with a rich cup of French press, tea or milk.
