Peanut Butter Chocolate Chip Cookies
Hard to resist eating just one of these JUMBO cookies
Ingredients
- ½ cup butter at room temperature
- ½ cup brown sugar
- ¼ cup granulated sugar
- 1/3 cup creamy peanut butter
- 1 egg at room temperature
- 1 teaspoon vanilla
- 1¼ cup flour
- 1 teaspoon cornstarch
- ½ teaspoon baking soda
- ¼ teaspoon salt
- 1 package of peanut butter and chocolate chips
- (or 1 cup peanut butter chips and 1 cup chocolate chips)
- Extra chocolate chips to press on top if desired.
Instructions
- Preheat oven to 350 degrees
- In a large bowl, with a stand mixer or hand held mixer, beat the butter, sugars, and peanut butter until mixture is smooth and creamy.
- Beat in the egg and vanilla.
- In a separate bowl, combine the flour, baking soda, salt and cornstarch.
- Slowly mix the dry ingredients into the wet ingredients until completely combined.
- Add in the peanut butter and chocolate chips until just mixed in.
- Using a large cookie scooper, (1/4 cup size) scoop and drop onto ungreased cookie sheet.
- Press additional chocolate chips onto the top of cookie dough if desired.
- Bake at 350 degrees for 12-15 minutes, until slightly browned edges.
- Cool on cookie sheet for 5 minutes before placing on wire rack to cool completely.
